Lovely, quiet atmosphere. Food was fresh and local and the staff were friendly and helpful in understanding the cuisine. I’d come back to Polignano a mare just for this restaurant

A great experience overall, but some “down dishes” preclude a 5-star rating. The entree and appetizers were tasty, some main courses a bit less.

We chose this restaurant because it was listed in the Michelin Guide, so we arrived expecting not only excellent food, but also knowledgeable, welcoming service. Unfortunately, our experience fell far short of those expectations.
From the moment we sat down, the service felt cold and condescending. The menu is quite confusing, so naturally we asked a few questions. Rather than helping us understand it, we were met with eye rolls and dismissive responses that made us feel uncomfortable for simply asking. We also noticed that we weren't the only table struggling to understand the menu.
If you order from the daily seafood selection, be aware that pricing is based on weight, making it very difficult to know what your meal will cost before ordering. We asked several questions to better understand the process, but never received clear guidance. The final bill was far higher than we expected for what we received, leaving us feeling disappointed by the lack of transparency.
There were also several mistakes with our order. We specifically requested a crudo platter with only oysters and shrimp because members of our group do not eat other raw shellfish or squid. Instead, the platter arrived with raw mussels, clams, squid, and other seafood we had explicitly asked not to include. No one acknowledged the mistake or offered a solution.
Throughout dinner, the service never improved. Our wine glasses sat empty for long stretches without anyone offering a refill, and overall the staff seemed far more interested in appearing refined than in providing genuine hospitality.
The food itself was good, but it was nowhere near enough to justify the overall experience. Michelin Guide recognition carries an expectation of exceptional hospitality alongside quality cuisine, and unfortunately this restaurant delivered neither.
Polignano a Mare has so many wonderful seafood restaurants with warm, welcoming staff who are happy to explain the menu and make guests feel comfortable. I would encourage visitors to choose one of those instead if you're looking for an enjoyable seafood dinner.
