Finding a true culinary hidden gem is rare. Finding one by pure coincidence is even rarer. Yet that's exactly what happened to us with TE.MA. After an unforgettable first dinner, we simply had to return a second time before leaving Salento. Chef Antonio suggested that, instead of repeating the tasting menu, he would create a selection of dishes for us to share so we could experience even more of his cuisine. It was the perfect idea. Once again, every single dish was outstanding. Different flavours, different textures, different presentations, but the same incredible level of precision, creativity and balance. Every plate showed remarkable attention to detail and genuine respect for the ingredients. It is the kind of cooking that surprises you while still feeling deeply rooted in Italian tradition. What impressed us just as much as the food was the warmth of this family. Antonio's mother welcomed us back as if we were returning friends. Her kindness and hospitality are impossible to describe—you simply have to experience them. Together with Antonio and his brother, they have created something truly special: not just an exceptional restaurant, but a place filled with passion, authenticity and heart. To finish the evening, we were treated to their homemade limoncello and blackcurrant mirto, both made from fruit grown on their own land. They were absolutely delicious—fresh, vibrant and unlike any commercial version we've ever tasted. We have spent a lot of time searching for the best culinary experiences in Salento, and we can honestly say that TE.MA. is in a league of its own. It feels almost surreal that behind the gates of this beautiful agriturismo, you discover a young chef with experience in some of Italy's finest Michelin-starred kitchens, creating food of this calibre. My wife could hardly contain her enthusiasm throughout the evening, and neither could I. When you recognise genuine talent, it's impossible not to be excited. Antonio has an extraordinary gift, and we sincerely hope that many more people will discover his restaurant. He deserves a full dining room of guests who truly appreciate this level of craftsmanship. Thank you once again to the entire family for another unforgettable evening. We left inspired, grateful and hoping to return one day.

An absolute culinary gem in Salento! We discovered TE.MA. by pure chance. As we drove past Panacea Agriturismo, even the sign outside radiated quality. After reading the reviews – all outstanding, despite the restaurant having been open for only about a year – we decided to make a reservation. It turned out to be one of the best decisions of our trip. We chose the six-course tasting menu, and from the first amuse-bouche to the final dessert, every dish was exceptional. You can taste the finesse, passion and dedication in every bite. Each plate is thoughtfully composed down to the smallest detail. The ingredients are incredibly fresh, the flavours perfectly balanced and the portions just right. This is not a traditional trattoria; it is a truly refined fine dining experience. We dine at Michelin-starred restaurants on a regular basis, so we know how special it is when a chef combines outstanding technical skills with genuine emotion on the plate. That is exactly what Antonio does. At just 29 years old, he has already spent more than a decade working in renowned Michelin-starred kitchens, including the three-Michelin-starred Villa Crespi. You can both see and taste that experience in every single course. What makes this place even more special is the family behind it. Antonio returned to Puglia to build Panacea Agriturismo and TE.MA. together with his parents and brother. His brother provides attentive, professional service, while his mother welcomes guests with a warmth that is impossible to forget. She speaks very little English, but that simply doesn't matter. Her hospitality, pride and love for what they have created together speak every language. The setting is just as memorable: dining in the peaceful garden of the agriturismo feels elegant and refined, yet relaxed and inviting. Add to that an excellent wine list, delicious homemade bread and genuinely personal service. We have spent quite some time searching for the very best culinary experiences in Puglia, and we can honestly say this has been one of the finest meals we have had here. If you appreciate refined, Michelin-level dining, TE.MA. is an absolute must-visit. Antonio is an exceptional talent. If he continues on this path, we would not be surprised to see Michelin recognise him in the future. This young chef deserves every bit of attention and success that comes his way. We enjoyed a private dining experience… just by chance. Absolutely incredible meal. The most welcoming family and wonderful atmosphere. We had the set menu and were amazed by the flavour of every single dish. Michelin quality, reasonably priced. Not to be missed.
