Ci teniamo solo a precisare che il nostro pollo viene prima cotto a bassa temperatura e poi rifinito sulla brace: questo tipo di preparazione può talvolta mantenere un leggero colore rosato pur essendo completamente sicura, perché la cottura a bassa temperatura non “aggredisce” la carne come le cotture più tradizionali.
